Start with the balance from your last bank statement: open Edit account and set the opening balance and date, then enter everything written since.

Most banks offer "Quicken (QFX)", "Microsoft Money (OFX)" or "CSV" under Download or Export on the account activity page. Quicken itself exports QIF.
